Coconut ice and coconutcakes are not really like by the man of the house, however, I really enjoy them both and from time to time will make this cake as it sort of combines a deliciously moist coconutcakewith an icing that is a bit like coconut ice
Top with the shredded coconut. Shredded coconut to serve (optional). Spread the icing over the cake. Use an electric beater to beat the cream cheese, butter and icing sugar in a small bowl until pale and creamy
Serve cold, drizzled over ice cream or pancakes. I ended up having one that was described as coconut ice, with grass jelly (available in tins at Asian supermarkets and quite delicious) and red beans (which I do not like and left on the side of the dish) and a brown sugar syrup that was completely luxe and amazing
Moist and zingy, with little crunches from the coconut and a slightly crumbly texture - if you love lemon cakes, you will love this and you'll have fun getting people trying to guess what the 'secret ingredient is'
Peel the bananas and place them into your Thermomix bowl along with the eggs. This cake is so deliciously moist and full of flavour and it really doesn’t need to be covered in icing, but today I couldn’t resist
