Ingredients

  • BABY SNAPPER AND SPICY POTATOES
  • 500 grams of baking potatoes
  • 3 tablespoons of olive oil
  • 2 tablespoons of sun-dried tomato tapenade
  • 1 teaspoon of chilli flakes
  • 3 baby snappers (serves 3 - we had Phillip's Dad for dinner)
  • 2 tablespoons of chopped parsley
  • 4 cloves of crushed garlic
  • ½ lemon, sliced into wedges
  • Salt and pepper
