Ingredients

  • Tart Crust
  • 1 1/4 cup plain flour
  • 1.5 oz (40g) finely crushed Amaretti cookies
  • 1/2 cup (125g) butter, cut into small cubes
  • 1/4 tsp salt
  • 3-4 tbsp iced water
  •  
  • Frangipane
  • 3.5 oz (100g) unsalted butter, softened
  • 3 oz (85g) icing sugar
  • 1 cup (100g) almond meal
  • 1/2 tsp vanilla extract
  • 1 egg, lightly beaten
  • 1 egg yolk
  • 2 large Granny Smith apples, peeled, cored and quartered
  • 2 tbsp caster sugar
  • 2 tsp ground cinnamon
  • 2 tbsp apricot jam + 2 tsp hot water, microwaved for 20 seconds
