Ingredients

  • 250 g butter 125g caster sugar 375g plain flour 60g rice flour ¼ tsp salt Method Preheat oven to 160 degrees celsius. Line two trays with baking paper. Beat the butter and sugar with an electric mixer in a medium sized bowl until pale and creamy. Sift over the rice flour, plain flour and salt. Mix with a wooden spoon until just combined. Place onto a lightly floured board and knead until smooth. Using a lightly floured rolling pin, roll the dough into a 3mm thick disk. Use a cookie cutter to cut into Christmas shapes or rounds (or cut into long thin bars if making variation 3). Place onto the prepared trays and and bake in the oven for 20 minutes or until lightly golden (swap trays halfway through cooking). Leave to cool completely on trays. Dust with caster sugar (or ice according to above variations). * Please note that if you're using one of the variations that uses melted chocolate, simply pop the chocolate melts into the microwave on 50% power for 3 minutes - stirring every 30 seconds 3.2.2885
