Ingredients

  • 400 gm fresh rice noodle (kway teow)
  • 300 gm beef fillet, sliced
  • 1 medium onion, sliced
  • 3 slices ginger, julienned
  • 3 cloves garlic, chopped
  • 3 spring onion, cut into sections
  • 200 gm beansprouts, both ends removed
  • 1 tbsp soy sauce
  • 1 tbsp hua tiao jiu
  • 1/2 tsp sugar
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 egg yolk
  • 1 tsp cornstarch
  • 1 tsp sesame oil
  • 3 tbsp oyster sauce
  • 2 tbsp light soy sauce
  • 1 tbsp thick dark soy sauce
  • 1 tsp chicken stock granules
  • 100 ml water
  • 2 tbsp hua tiao jiu
  • salt and pepper to taste
