2 Layer Pandan Cake

Pour batter into pandan layer. PANDAN LAYER400 ml coconut milk ( I used 2 packets of 200ml ready packed coconut milk )50 ml pandan juice ( about 8-10 large pandan leaves blended with 1/2 cup water, measure out 50 ml, keep remainder )300 ml light pandan juice ( add water to the remainder of above to make amount )150 g sugar ( this can be reduced )60 g cornflour1 tbs instant jelly / agar agar powder1/8 tsp saltgreen coloring, optionalMETHODCombine all of the above in a large pot and whisk over medium heat until mixture thickens into a starchy consistency

add pandan leaves. Mix agar agar powder with water and sugar, mix well. Steam Kueh Lapis Recipe source from Baking Mum Ingredients500 gm tapioca flour450 gm Sugar (* I reduce sugar to 400 gm)1 tsp vanilla powder150 gm rice flour ( I add another 2 tbsp )1 tsp salt1 and half  fresh shredded coconut (1st squeeze milk 500 ml)(2nd squeeze milk 1000 ml)A few pandan leavesMethods1. Put sugar, pandan leaves, 800 ml of 2nd squeeze coconut milk, stir well. Rose JellyRose JellyIngredients1 packet agar agar powder (13gm)900mls water200 gm sugar3 to 4 pandan leaves5 tsp fresh milk1. Scoop out 1/2 bowl of agar agar mixture add 1 tsp milk and few drops of pink color, mix well. Scoop out 1/4 bowl of agar agar mixture, add  1 tsp milk and few drops of green color, mix well. Mix remaining agar agar mixture with 3 tsp of milk, mix well and pour the entire mixture on top of the rose slowly. 1 packet agar agar. 4 pandan leaves

When that is done, put back the liquid mixture back on stove and add in the soak agar agar strips and boil under medium low heat until the agar agar strips has fully melted

Bring water to boil with pandan leaves. Pour the red agar agar solution to the rose portion and green agar agar solution to the leaves portion
